Galentine’s Day – Host a Celebration for Your Best Gals

Valentine’s Day is the perfect time for a little girlfriends’ get together! I’ve hosted a lot of Valentine’s themed parties for my friends and this year decided to do a “Galentine’s Day” breakfast. Get it? An excuse to celebrate Valentine’s Day with some of your best gals! I’m not sure where the idea originated, but I got it from Leslie Knope. 🙂

I purposely had the breakfast last week, so I could share it here and on River City Live (a video from the show is at the bottom of the post) today and hopefully inspire you to host your own gathering!

First thing’s first. I am not the hostess with the mostess and have found that having friends over for breakfast is MUCH less stressful for me than dinner. I can buy most of the food (more about that below) and just make one or two things, but still give the meal a homey feel – it’s a great excuse to break out the wedding china. So breakfast/brunch is kind of my go-to thing!

Here’s what I served for breakfast:

– Donuts (If you come to our house for any festivity, there will be KK donuts!)
– Fruit
– Baked Oatmeal (Recipe at the end of the post)
– Mini quiche
– Coffee
– Hot Chocolate Bar (Starbucks copycat recipe)

I think Galentine’s Day Breakfast will be an annual event from now on!

This is my friend Audrey’s baked oatmeal recipe. It’s healthy and delicious!

1 C Oats
2 T Chia Seeds
1/4 C Unsweetened Coconut
1/2 t Baking Powder
3/4 t Cinnamon
Pinch Salt
1/4 C Maple Syrup
1 C Almond Milk
1 Egg
2 T Coconut Oil
1 t Vanilla
1-2 Ripe Bananas, Frozen Blueberries

Mix all dry ingredients together.
In a separate bowl melt coconut oil and mix all wet ingredients together.
Slice banana on bottom of pie plate, sprinkle with some berries, top with dry mix and pour wet ingredients on top and sprinkle with more berries.
Bake at 375 for 30 minutes.
