Easy Chocolate Peppermint Bark

It’s also the one and only season when I enjoy baking treats! (And by baking I mean melting chocolate in the microwave. I’ll share more on that in a minute…)  All you really need to make people feel loved around the holidays is a thoughtful card and homemade treats. And American Greetings holiday cards make it so easy to spread a little cheer. When paired with home-made goodies, they make the perfect sweet and simple gift! I picked up a pack of festive cards at Target last week and then made some of my favorite chocolate peppermint bark for a quick, easy gift.

If you’d like to spread a little cheer in the form of a simple treat, here’s how I make chocolate peppermint bark:

Easy Chocolate Peppermint Bark

Ghirardelli Dark Chocolate Melting Wafers – 10oz Bag
Ghirardelli White Chocolate Melting Wafers – 10oz Bag
Peppermint Extract – 1/2 Teaspoon
Candy Canes – At least 2

-Line a cookie sheet with parchment paper.

-Pour the bag of dark chocolate into a microwavable bowl and melt for 30 seconds. Stir and continue melting the chocolate in 15 second increments. Be careful not to over-cook! Once it’s melted, pour the dark chocolate onto the cookie sheet and spread it into a thin layer. Now put it in the fridge for 5 minutes while you work on the white chocolate!

-Pour the bag of white chocolate into a microwavable bowl and melt for 30 seconds. Stir and continue melting the chocolate in 15 second increments. Once it’s melted, stir in the peppermint extract then quickly remove the cookie sheet from the fridge and pour the white chocolate layer on top of the dark chocolate. Spread evenly.

-Sprinkle the top with crushed candy canes then place the cookie sheet back into the fridge. Leave the bark in the fridge for about 30 minutes then take it out and break it into rough pieces. Try not to eat it all before you share with friends! 🙂
