I eat pretty healthy most of the time and can usually get through the day making good food choices. But then it’s 9:00pm, and we’re sitting down to watch a show on Netflix. Suddenly I find myself sneaking goldfish snacks out of the pantry and eating half the bag. Or Anderson offers to run out and get us some frozen yogurt! And I can’t say no to frozen yogurt. So I’m always on the hunt for healthy snacks. When I saw these Weight Watchers brownies at Publix, I knew they would be the perfect addition to one of my favorite chocolate toasted coconut smoothie recipes.
Toasted coconut is our favorite ice cream flavor, so I make this chocolate toasted coconut smoothie A LOT! It’s delicious, healthier than ice cream, and with the salted caramel brownies mixed in, it has just a hint of salt to offset the sweet. Anderson asks me to make these all the time, and I figure it’s only fair since he goes on so many fro-yo runs for me. 🙂
Toasted Coconut Smoothie
3 small frozen bananas
1/3 cup peanut butter
1 tsp vanilla
1 tbsp pure maple syrup
2 tbsp unsweetened cocoa powder
1 1/2 cup almond milk
1/3 cup unsweetened shredded coconut
2 Weight Watchers salted caramel brownies
– Heat your oven to 350 (or just use a toaster oven for this step like I do!) Spread the shredded coconut on a baking sheet and toast until it starts looking brown. About 5 minutes. Remove from the oven and let it cool while you measure out the rest of the ingredients.
– Place all ingredients in a blender and blend until smooth.
*Makes two smoothies
Also, if you’re feeling too lazy to make a smoothie, just grab one of these Weight Watchers brownies!
